Vegetables on white sauce.

Ingredients for 4 people:

500 g of potatoes

2 courgettes

1 leek

Grated cheese gratin

oil

- For the bechamel  (white sauce):

15g. butter

15g. flour

milk

salt

nutmeg

- Peel and cut in thin slices the potatoes , clean and chop the leeks and courgettes . Cook the potatoes about 20 minutes in salted water  and drain them. In a pan fry the leeks and the courgettes  for a few minutes. Preheat oven to 180 º .  Make the bechamel, melt the butter in a saucepan add the flour, stirring well to avoid lumps and add the hot milk, salt and nutmeg. Cook for few minutes. In a bowl mix the potatoe with the rest of vegetables , add the bechamel and sprinkle grated cheese. Bake about 20 minutes

Quinoa is good for you!!

The first time I tried quinoa it was for breakfast and it was fried with almonds and mixed with fresh fruit!! it was so tasty and made me feel the rest of the day with lots of energy!!

Quinoa is a wonderful source of iron and protein and the slow-releasing carbohydrates in Quinoa can help maintain blood sugar levels.the basic way to prepare quinoa  is by boiling it in water. You use one part of quinoa for two parts of water. Rinse the quinoa under a tap to get rid of coating. Simmer for about 10 minutes. When done, the white germe separates from the seed. Cover, remove from the heat and leave until all the water has been absorbed.

Ingredients for 2 people:

1 onion

1 green pepper

4 cloves of garlic

6 mushrooms

Braised tofu ( you can find it in Holland and Barrett)

150gr. Quinoa

Herbs salt

ground black pepper

Chop all the vegetables ans stir fry them together with the tofu. In the mean time cook the quinoa as it is explained above. Once it is cooked, mix everything and serve it when is warm.

Spanish chocolat sponge

6 eggs
1 cup olive oil
1 cup milk
500 g. whole wheat flour
2 cups brown sugar
2 packets yeast
chocolate powder (according to taste) 4 or 5 tablespoons
Preheat oven to 180 degrees, mix all ingredients and bake the mixture at the same temperature for 50 or 60 minutes. Rico!
You can also do without chocolate and grated lemon peel to the mix
